Do Try This Yummy Southern Sweet Potato Casserole As Part of Your Thanksgiving Dinner!


Since fresh yams or sweet potatoes are so plentiful at this time of year, I thought you might enjoy another wonderful way to prepare them as a part of your Thanksgiving dinner.  This particular recipe that I want to share is another family favorite for a delicious sweet potato casserole that uses mashed yams or sweet potatoes topped with a brown sugar-pecan mixture for a special holiday treat.

This tempting dish comes to you from South Carolina and courtesy of the Southern branch of our family.  I hope you want to try it this year because it is so good!

Southern Sweet Potato Casserole

3 cups of mashed, cooked sweet potatoes or yams
1 cup of sugar
1/2 teaspoon of salt
2 eggs
1 teaspoon of vanilla
3 tablespoons of margarine (not spread)
1/2 cup of milk

Topping:

1 cup of brown sugar (light or dark)
1 cup of chopped pecans
1/3 cup of flour

To Prepare Your Casserole:

Mix all the casserole ingredients together except for the milk and vanilla, which go in last.

Pour into a greased baking dish.

Sprinkle with the topping and bake in a 350-degree oven for 30-35 minutes.

To Prepare Your Topping:

Mix the topping ingredients by hand until the mixture is crumbly. 

Spoon this topping mixture over the casserole and bake as directed.
