raw-cod-fillet.jpeg
You won't believe how simple and low-calorie this baked cod fillet can be with my delicious crumb topping.

Here is a healthy, low-calorie main course that is easy and won’t keep you confined to your kitchen that I love very much.  My recipe will create a delectable, flaky baked fish that is gently coaxed to optimum flavor with olive oil, garlic and fresh, chopped basil and a special Parmesan cheese topping.

I honestly hope that you try my recipe because once you do I am confident that you will make it again and again.  Yep, it is that good!

No-Work Best Baked Fish With Crumb Topping

2 lbs. of your favorite fish fillet (pollack, cod, sole, flounder, etc.)
3 cloves of finely minced fresh garlic
half of a fresh lemon or 1-1/2 tablespoons of bottled lemon juice
salt
pepper
1/4 cup olive oil
½ teaspoon of paprika

Clean and rinse your fillets.  Pat the fillets dry before arranging in your baking pan.

Drizzle the fillets with olive oil and coat both sides before adding some of the freshly squeezed lemon or bottled lemon juice to each.

Next, sprinkle each fillet with the finely minced garlic, salt, pepper, and paprika before adding the crumb topping.

Crumb Topping:

1 stack of saltine crackers
olive oil
1/4 cup of fresh, chopped basil
2-1/2 tablespoons Parmesan or Romano cheese (whichever is your favorite)
1/4 red pepper flakes

Roll your crackers out with your rolling pin on a sheet of wax paper to form fine crumbs.

Now mix the ingredients with the exception of the olive oil together and mound on your waiting, unbaked fillets.  Drizzle some olive oil on top of each fillet to keep moist.

Leave your fillets uncovered and bake in a 350-degree oven for about 25 minutes.

ENJOY!
